Honestly, they’re way better than anything you’d get at a bakery. These cute little strawberry muffins are simply unbeatable!

Can you believe I’d never made strawberry muffins with fresh strawberries before now? I recently spotted a fresh strawberry muffin at a bakery in the Hamptons and immediately knew I had to create my own version. These muffins are the ultimate summer treat for you all to enjoy.

I wanted these muffins to feel extra special and, most importantly, taste like the sweetest, most delicious strawberry muffin ever. After testing a few different versions, I finally landed on the one I’m sharing with you today.

Soft, sweet, moist, and just slightly crumbly, these muffins are swirled with the perfect amount of strawberries and caramel. They’re seriously delicious and smell like summer in every bite—so irresistible!

Here’s how to make them:

Step 1: Ingredients

Step 2: Make the strawberry caramel
Toss the strawberries with sugar and let them sit for about 15 minutes until they release all their juices.

Next, strain the juices into a pot, add a bit more sugar, and bring the mixture to a boil. Keep cooking until the sauce thickens into a rich syrup and the sugar fully dissolves.

Pour the sauce onto parchment paper and let it cool. Once it’s set, you can break it into shards—almost like candy. Set these aside for later.

Step 3: Make the muffins
Mix the coconut oil with the eggs, honey, sour cream, vanilla, and lemon zest.

Now, add the dry ingredients—flour, baking soda, baking powder, and salt. Gently fold in the chopped strawberries and those yummy caramel pieces.

Step 4: Bake the muffins
Divide the batter evenly into a muffin pan lined with parchment paper liners.

Sprinkle the tops with coarse sugar and bake until the muffins are just set. Your kitchen will smell amazing—like sweet, summery strawberries!

As they bake, the sugar on top caramelizes, giving the muffins a slightly crunchy finish.

Once they’re out of the oven, try to enjoy them warm—that’s when they’re at their absolute best! The caramel mixed into the batter makes them extra special and even more delicious.
