Honestly, theyโ€™re way better than anything youโ€™d get at a bakery. These cute little strawberry muffins are simply unbeatable!

Can you believe Iโ€™d never made strawberry muffins with fresh strawberries before now? I recently spotted a fresh strawberry muffin at a bakery in the Hamptons and immediately knew I had to create my own version. These muffins are the ultimate summer treat for you all to enjoy.

I wanted these muffins to feel extra special and, most importantly, taste like the sweetest, most delicious strawberry muffin ever. After testing a few different versions, I finally landed on the one Iโ€™m sharing with you today.

Soft, sweet, moist, and just slightly crumbly, these muffins are swirled with the perfect amount of strawberries and caramel. Theyโ€™re seriously delicious and smell like summer in every biteโ€”so irresistible!

Hereโ€™s how to make them:

Step 1: Ingredients

Step 2: Make the strawberry caramel
Toss the strawberries with sugar and let them sit for about 15 minutes until they release all their juices.

Next, strain the juices into a pot, add a bit more sugar, and bring the mixture to a boil. Keep cooking until the sauce thickens into a rich syrup and the sugar fully dissolves.

Pour the sauce onto parchment paper and let it cool. Once itโ€™s set, you can break it into shardsโ€”almost like candy. Set these aside for later.

Step 3: Make the muffins
Mix the coconut oil with the eggs, honey, sour cream, vanilla, and lemon zest.

Now, add the dry ingredientsโ€”flour, baking soda, baking powder, and salt. Gently fold in the chopped strawberries and those yummy caramel pieces.

Step 4: Bake the muffins
Divide the batter evenly into a muffin pan lined with parchment paper liners.

Sprinkle the tops with coarse sugar and bake until the muffins are just set. Your kitchen will smell amazingโ€”like sweet, summery strawberries!

As they bake, the sugar on top caramelizes, giving the muffins a slightly crunchy finish.

Once theyโ€™re out of the oven, try to enjoy them warmโ€”thatโ€™s when theyโ€™re at their absolute best! The caramel mixed into the batter makes them extra special and even more delicious.
